Look up this sustainably dry farmed wine in the Zindictionary and you will find these highlights: spice, pomegranate, classic raspberry, aroma of cherries, herbs de Provence, jelly donut and blueberry tart. Crisp acidity, balance and round tannins scream drink me! This hillside Zinyard is farmed by Paul Bernier on the Sibary land and is a field blend of 80% Zin, 10% Petite Sirah and 10% Carignane.  The alcohol is 13.9%, so not too much. Aged 7 months in 25% new French oak and another 11 months in neutral French oak. Capable of aging eight years or more. Pair with Roast chicken (crisp the skin) and Dijon mustard cream sauce or red snapper Huachinango. Cheese pairing of Asiago, aged Manchego, Grana Padano. SOLD OUT TO THE WINE CLUB
