As my French friend says, Je ne consulte que mon plaisir (I only consult my pleasure). We’d say this Cab embodies that sentiment. Drop into dense currants, sarsaparilla and a nice Cuban cigar puff on the nose. Velvety-textured tannins with a classic Bordeaux structure yields a long finish. 85% Cabernet, 15% Merlot from our 27-year-old vines planted in gravelly, clay loam soil behind the winery. Fermented in small bins and aged for 12 months in neutral French oak with an additional 6 months in 50% new French oak. Decant to drink now or age for many years (10+). Pairs with Osso Buco’s depth or New York steak au poivre. Cheese plate contains Bellwether Farms Carmody, Cowgirl Creamery Mt. Tam or an aged Cheddar.
