Trader Joe's was selling Copper River Salmon which I had in the freezer. So today I found a recipe from Rick Bayless, great couple of restaurants in Chicago (high level Mexican). I've met him a few times and eaten there a few times. Nice guy.
I found an interesting recipe for salmon with a honey chipotle glaze and peanut chipotle sauce and decided to make it with "sticky rice" with pineapple flavors.
Usually we have pinot with salmon but that doesn't really match this sort of thing, so we figured a GOOD zin would be the perfect thing... and the 2006 Nalle Reserve Zin was!
